Chicken Guacamole Sandwich




Few weeks before I shared the recipe of guacamole and few days after that of Turkey Guacamole Wrap and few days later the recipe of Turkey Bacon Guacamole Sandwich. Yes it is true I am increasingly growing fond of guacamole. So here goes another lip-smacking mind-invigorating recipe of Chicken Guacamole Sandwich, one of the best sandwiches I have tasted so far. This sandwich is so good that you can actually consider serving it in restaurants. Seriously!!

Chickpea Sandwich



In US, everything is organized and put in proper order. You just need to look out and starting from road directions to grocery stores, banks, market place everything is well-directed and arrayed in designated places. You will not see grocery stores lined up in and around housing complexes as are common in India. Proper positioning of items in designated areas definitely is a good idea, but at times while cooking something if you remember of an ingredient for immediate use; you won't get the thing available within walking distance right in your neighborhood. You need to take your car out and drive few miles to avail the ingredient. This makes things like grocery shopping hasslesome for people like me who don't function with organization and only remember things at the last moment. Another drawback for things being arranged in specific order of places is nothing being within walking distance, the tiny bit of agility we acquire by walking down few blocks while heading to a grocery store is out of option here. Life becomes very sedentary and dependent on driving. As life becomes sedentary, a lot of uncalled for health issues crop up. No doubt why obesity is a big problem here because unless you are conscious of what you eat and stir your body into a routine exercise, chances of putting on weight even maintaining a normal diet is high.



 

I have become extra cautious about my diet after coming over here. Whatever you eat seems to cling on to your body unless you visit gym regularly but for many working people, heading to the gym every day is not a viable option always.

Anyway, sandwich is considered to be healthier than many deep fried items and now that I have become a tad conscious about what I put into my mouth, I have taken a fondness for sandwiches. So here goes an awesome chickpea sandwich for you.

Cucumber Sandwich with Cream Cheese



Sometimes it feels nice to give cooking a break and settle for something simple yet fulfilling. Nothing can serve this purpose better than sandwiches. Talking about sandwiches, the first ever sandwich I had in my life was the one made by my mother. It was during those days when there was no presence of CCD and Barista in Kolkata. My mother's version of sandwich was very plain, bread slices coated with butter were arranged on top of each other with tomato and cucumber slices put inside. She would add a sprinkling of salt and crushed black pepper to enhance the flavor and pronto, sandwich is ready. These sandwiches maa used to pack quite frequently in my school tiffin, apart from Egg Fried Noodle, of course, the story that I narrated in my earlier post.
 
 
Anyway, children of today's generation won't feel satisfied with sandwiches so simply put together. They like stylish things. I have seen my sister, for example, floundering around to pack something fancy for her children in tiffin, otherwise the boxes in most of the days return unfinished. So mothers can think of garbing the old cucumber sandwiches in dollops of cream cheese and mayonnaise mixture, boosting up the flavor to a great degree and who doesn't love mayonnaise?? Children will go brouhaha over it.

Turkey Bacon Guacamole Sandwich



A beautiful quote by Dalai Lama says "Sometimes not getting what you want is a wonderful stroke of luck." It is no wonder that our heart sometimes craves for something that would do more harm than good. We fall in love with wrong people, desperately crave for them, cry our heart out, and get into depression for not having the one we desire, but time has its wonderful way of showing that not always the things we crave for are good for us in the long run. You may have seen it yourself that with some people the chemistry just clicks without any problem and with some people, no matter how hard you try, something untoward as if pre-destined happens impeding the growth of a viable relationship. This Universe works in a mysterious way in conspiring events, leading to an ultimate epiphany.
 
 
 


Years ago I read in a journal about a woman betrothed to a man who declined the marriage because of some issue and later the girl got married to somebody else. Within less than a year she came to know of the former fiancé having died in an accident. Fate or the Universe or whatever you call it saved her from an early widowhood. Similarly, one couple was on the verge of divorce, living separately and contesting in court when the wife met an accident and went into coma. The husband, shaken by the incident, started spending more of his time with his comatose wife fighting for survival. Years later the wife regained consciousness and both coalesced into a happy union keeping their past grievances behind.
In my personal life also, I have had the same epiphany while celebrating our 5th anniversary. No one else would have been more appropriate for me other than him :)



 
Anyway, coming back to the recipe, in my earlier entry, you have found the recipe of guacamole and now with this recipe, you may learn how to use guacamole to make a perfect gourmet sandwich. I just love the creamy texture of avocado in each bite. It is absolutely aphrodisiac.

Egg Avocado Sandwich

 
 

Sweet creamy avocado, aren’t they tasty? It is very recently upon coming down to US I have become
aware of a lot many usages of avocado in a variety of delicacies. Usually, avocado is ripened in
normal temperature for 3-4 days before being put to use. Ripe and overripe avocados are of creamy
texture, easily giving away under pressure of your fingers. In case the avocados are not ripe but you
need to use them immediately, you may boil the avocados in microwave for 5-8 minutes and then
crush them. Although over ripe avocados are tastier, but the ones softened through boiling also taste

good, at least I like them.

Corn Sandwich

Days when I don't feel like cooking anything with elaborate preparation, I stick to making sandwiches, which are simple and less time consuming. One such sandwich is Corn Sandwich. It's one of my favorites, not because it tastes yummy but because of the time it takes. There was a time in Bangalore when we used to be in lot of rush in the morning due to both of us going to office, quite opposite to our present situation when I am sitting at home fulltime and cooking this and that delectable for hubby. Those were the days when getting a decent meal were enough for us, forget anything fancy. Anyway, so Corn Sandwich was one of the items regular on our menu for breakfast before running for office. This recipe is to help all the busy bees searching for some quick breakfasts during rush hour. Happy eating !!

Chicken Double Decker Sandwich



 
Yesterday we visited Toledo Zoo in the evening to view the Christmas and New Year special lightings and decor. The entire tour inside the zoo was conducted in open air and with temperature dipping below 18F, the air was so chilly only comparable to the inside temperature of a freezer. I was properly bundled up from head to toe in few layers of clothing but as if that were not sufficient enough, air penetrated through my jeans and jacket reaching my bones. It was one of the bone-rattling experiences you might say as I was chilled to the bone, hook, line and sinker and could feel my muscles getting numb. Quickly for half an hour we took shelter inside a cafe located at the zoo, and then I came out sipping hot chocolate purporting to keep my body warm. Usually, I am not the kind to drink anything bubbling hot. I usually let my drinks come down to lukewarm temperature before allowing myself the first sip. Having the centre of my tongue singed couple of times by drinking very hot tea or coffee has turned me super cautious while drinking something just out of the oven. But in a terribly cold weather, gurgling down a hot drink seemed so soothing for throat, tongue and every nerve running through my body.
 
 

After a nerve freezing walk around the zoo, my hands and legs stiff from numbness took at least an hour to restore its normalcy; it was like I was a frozen 'murgi' (chicken) thawing in normal temperature....lol

Tuna Sandwich with Pineapple Salad

 
 

Snow started pouring from early hours of the morning today continuing throughout the day. The entire town of Perrysburg is now buried under ankle deep snows. The view is amazing outside at night with the street lights reflecting on snows diffusing a beautiful glow across the sky making it appear brighter than normal. I will post some snaps as soon as the snow falling stops.

 


Tonight we were in mood for having sandwiches. No cooked item being present at home, I had a lot to cook for tomorrow; hence I planned of making these quick tuna sandwiches for dinner. These sandwiches are very easy to put together, so easy even my husband can make them :) Seriously, all of you wanting their husbands to attain a shade of decency in cooking may goad them into preparing sandwiches, that way you would get some time off for relaxation while your hubby stays busy making a meal for you. What say!!

Egg Sandwich



Looks like dengue fever has hit Kolkata endemically with so many people I know reported to be suffering from the ailment, my own nephew among the many. Spread by mosquito bites during the late monsoon, I feel relieved of one thing after coming to US, the little monsters we know as 'mosquitoes'. It seems mosquitoes are nonentity here especially the part of US we reside in.



 
A recent article published on Times of India asserts the harmful effect of one mosquito coil being equivalent to smoking ten cigarettes. If this revelation carries an iota of truth, me and my hubby, though non-smokers have exposed us to the same extent of toxicity a chain smoker inhales every day, unknowingly for years during our stay in the city of joy. Not only us, I am sure, there are many who in order to enjoy a peaceful goodnight rest have mosquito repellants burning close by the bed side or beneath the bed throughout the night, worse in a closed room with doors and windows completely shut if the AC is turned on. I shudder to think what long term consequences are awaiting us in the coming days for so long as we stayed in Kolkata, we had the coil burning almost every day. No matter what you do, close the windows of your house before sunset or use a Bagon spray to get rid of the killer insects, you will find them humming around the bed after every light is turned off, so much as one single mosquito being enough to blow your cool keeping you restless through the night.



 

For many like my parents, net is a safe option to shield from the onslaught of mosquitoes, but the blood-sucking monsters get their way inside the net also as it did happen to me many a time when upon turning and tossing about my bed for several hours in a struggle to remain asleep ignoring the sting of the bites that finally, robbed of my sleep, I would forcefully get up from my bed in a fit of rage, switch on the light and set to a venture of killing the muggers.


 

Coming back to the recipe, sandwiches are my favourite, especially the ones requiring minimal preparation. The Egg Sandwich described below is one such darling that can be quickly put together and consumed in a hurry, provided you make the plan a little ahead and boil the eggs beforehand.

Honey Bun Chicken Sandwich

I had a terrible Wednesday this week....a nightmare that, I want, to be erased from our life. I was sleeping peacefully early in the morning when I felt my hubby getting up, turning off the alarm and like he does every day, he went to the bathroom for shower. Next I remember hearing a loud noise. The first thought that came into my mind upon hearing the thud was of sheer denial that something bad had happened. I forced my mind to think that someone might have come into our room and giggled loudly which sounded like a noise to me in my sleep. But no, 'a look' at the bedroom door from our bed proved me wrong as the door was shut and the room was empty. Next I looked askance towards the mirror on the side of the bed standing in front of which Debu brushes his teeth and combs his hair every day before going to office. He was not there too. Then a slight rustle brought my notice to the floor where Debu was lying unconscious overpowered by a convulsion. I jumped from my bed and the condition I saw him in with his eyes going above his head and hands and legs taut with stiffness just scared the hell out of me. Next I called a friend staying in the room next to ours in the hotel for help and she dialled the front desk who eventually informed 911.

Debu was taken to a hospital and a battery of tests was performed in order to figure out the reason of his seizure. He was admitted in the hospital for a night and I know only how I had spent the night all alone in the hotel room. Good Lord that the test results came negative and apart from the cholesterol and blood pressure detected to be on higher side, nothing else turned up bad to cause worry. The doctor advised hubby to take ample rest and sleep, which he was deprived of badly since the day we shifted here, thanks to a group of over-friendly people who were being too pushy to socialise. For the first time in my life I was made to feel that being reserved and taking time to open up is a crime. Some people are so damn selfish that they don't take other people's situation into consideration. The less you talk about them, the better it is. I am happy that my hubby is back safe and sound with me.

Potato Masala Sandwich

Recently I read an informative article upon spices. I never had any clue of information that apart from enhancing the taste spices contribute to killing bacteria and prevents food-poisoning. I also came to know that the trend of using more spices grew in tropical countries due to the reason of foods spoiling sooner in hot and humid weather than the colder ones. Now that's a nice bit of information. Isn't it? From now on while eating a spicy dish, think of all the good effects of spices rather than worrying over stomach doldrums.


If you are on a diet and want to avoid carbs, this sandwich is not meant for you, but if you are like me going by the demands of your palate, potato masala sandwich would be a toothsome treat to feast upon. I just love to have such sandwich once in a while during the weekdays.
