Snow started pouring from
early hours of the morning today continuing throughout the day. The entire town
of Perrysburg is now buried under ankle deep snows. The view is amazing outside
at night with the street lights reflecting on snows diffusing a beautiful glow
across the sky making it appear brighter than normal. I will post some snaps as
soon as the snow falling stops.
Tonight we were in mood for
having sandwiches. No cooked item being present at home, I had a lot to cook
for tomorrow; hence I planned of making these quick tuna sandwiches for dinner.
These sandwiches are very easy to put together, so easy even my husband can
make them :) Seriously, all of you wanting their husbands to attain a shade of
decency in cooking may goad them into preparing sandwiches, that way you would
get some time off for relaxation while your hubby stays busy making a meal for
you. What say!!
Ingredients :( make 8 sandwiches) Cooking time: 30-40 minutes
ü 222 gm tuna fish flakes
ü 16 slices of white bread
ü 2 heaped tbsp frozen plain yogurt (beaten)
ü 2 tbsp grated cheddar cheese
ü Salt to taste
ü Black pepper, according to taste
ü 1 tsp paprika
ü Butter for spreading
ü 2 eggs
ü 1/2 cup milk
ü 1/2 tsp kashmiri red mirch
ü White oil
For Pineapple Salad:
ü 2 cups of diced pineapple
ü 1 tbsp granulated sugar
ü Salt to taste
ü Black pepper, taste wise
ü 1/2 dried mint flakes
Method:
1) Mix together tuna fish
flakes, cheese, yogurt, salt, black pepper and paprika. Press a small round
steel container on the bread slices to cut round shapes as shown in the pic:
2) Spread butter on one
side of each bread slice, put tablespoon of tuna mixture in the middle
smoothing the top and cover with another slice. Press firmly keeping the
sandwich between your palms.
3) Beat eggs, milk, a
pinch of salt and kashmiri red mirch into smooth mixture. Just like you do
while cooking French toast, same way dip the tuna sandwich into the egg
mixture and shallow fry in hot oil.
4) For the pineapple
salad, mix the ingredients, as mentioned, together. Serve the tuna sandwich hot
with pineapple salad.
