Banana Bread serves you a healthy way to begin your day. One slice of this
bread with tea or coffee or milk makes a happening breakfast, ideal for busy
couples.
Ingredients: Cooking
time: 1 hr 20 mins approx.
ü 2 medium sized fresh zucchini (grated)
ü 4 medium sized over ripe bananas, mashed
ü 2 1/2 cups of all-purpose flour
ü 2 eggs, beaten
ü 1 cup vegetable oil
ü 1 1/2 tsp baking powder
ü 1 1/2 cup of granulated sugar
ü 1 tsp ground cinnamon
ü 1 tsp vanilla essence
ü 1/2 tsp salt
Note: You may add dried fruits, raisins or choco
chips at the end to add to the taste.
Method:
1) In a mixing bowl,
combine all the wet ingredients and whisk well into a smooth mixture.
2) In another mixing bowl, mix in the dry
ingredients and then pour the wet mixture little by little into the dry
mixture. Stir till all the ingredients are incorporated.
3) Preheat oven to 350
degree F/180 degree C. Grease a baking pan with oil and flour. Pour the
mixture into the pan and bake for an hour or so till a toothpick inserted at
the centre comes out clean.
4) Allow to cool before
slicing the cake.
