Corn Paneer er Chop - Corn Paneer Fritters



Yesterday was Friday and Friday night calls for a celebration of food. We usually hop onto a
restaurant or cook something special at home on Friday nights. When I used to work, Fridays held a
 special charm for me because it brought emancipation from work for next two days. So keeping in
with the past trend, still me and hubby spend Friday nights with the same enthusiasm.

Corn Paneer er Chop is a perfect treat to be had on Friday evenings for snacks. It goes so well with
kasundi or yellow mustard sauce. The tanginess of the mustard sauce blending with the sweetness
of corns and paneer contribute to a wholesome foody affair.

 
 
Ingredients:                                                     Cooking time: 40 minutes
ü  200 gm paneer (grated)
ü  1/2 cup sweet corn kernels
ü  1 boiled potato (mashed)
ü  1 small size onion (finely chopped)
ü  4-5 green chillies (chopped)
ü  1 tsp garlic paste
ü  1 tsp garam masala powder
ü  1 tsp chat masala powder
ü  2 eggs
ü  Breadcrumbs as per need
ü  Salt to taste
ü  Sugar as per taste
ü  White oil for deep frying
Method:
1) Boil the sweet corns for 3-4 minutes in microwave or stove top. Drain the water and pat the corns dry.
2) In a mixing bowl, mix in the following ingredients - mashed potato, paneer, sweet corn kernels, garlic paste, green chillies, onion, chat masala powder, garam masala powder, salt and sugar. Combine them well and make small balls out of them. Pressing between your palms, flatten them.
3) Beat the eggs in another bowl. Spread the breadcrumbs on a plate. Now dip the patties into the eggs and roll on breadcrumbs, carefully coating all the sides. With the press of a thumb, cast the patties into perfect round shape smoothing the edges.
4) Deep fry in smoking hot oil and serve hot with any favourite chutney or sauce of yours.
