Spinach Stuffed Chicken Breast



For next few months you will see a host of low calorie cuisines in my space. With some serious efforts being made from my side to reduce weight, I conceive my sharing recipes conducive to weight loss would help a lot many like me struggling to keep in shape. However, that does not mean that I will refrain from posting the savory treats that are regular in my blog.






Ingredients:                                          Cooking time: 20-30 minutes
ü  200 gm chicken breasts
ü  1 onion (chopped)
ü  150 gm spinach (blanched)
ü  4 garlic cloves (chopped)
ü  1/2 cup crumbled feta cheese
ü  Black pepper, taste wise
ü  Salt to taste
ü  1 tbsp lemon juice
ü  1 tbsp white oil for cooking
Method:
1) Firstly, cut each chicken breast into 2 pieces. Cover them in plastic wrap. Blow them with your knuckles to smoothen out. See the pic below for reference:


2) Heat oil in a non-stick skillet. Add garlic and onion. Fry till onion changes color.
3) Add spinach. When spinach begins to wilt, add feta cheese.
4) As feta cheese melts into the spinach, sprinkle salt and black pepper. Squeeze lemon juice. Turn off the flame.
5) With a slotted spoon, take the spinach mixture on to a plate. A bit of juice released by the spinach will remain in the pan. Divide the mixture now among the prepared chicken cutlets.
6) Roll them up and bind with toothpicks.
7) Transfer them into the same pan and on medium flame cook covered till chicken is tender and slightly browned.
8) Remove toothpicks and serve hot.
