Egg Envelope



Egg Envelope is a tasty quick-time snack involving minimum hassle for preparation and can be ready within few minutes. It's great to have for a tiffin at school or office and can save you from the pain of heavy cooking.

Ingredients:

3-4 eggs

2 cups of all purpose flour

1 capsicum (chopped)

1 onion (chopped)

2-3 green chillies (chopped)

1/2 cup of coriander leaves (chopped)

1 tbs tomato sauce

1 tsp black pepper powder

White oil for cooking

salt to taste

Method:

1) Mix salt and a bit of oil with all purpose flour and make a dough. Make small balls from the dough and roll them out into medium size flatbreads or small parathas.

2) Lightly fry the parathas on both sides using little of oil.



3)  In a bowl mix eggs, green chillies, coriander leaves, capsicum, pepper powder, salt and tomato sauce. Whip well to bring the mixture to a smooth pouring consistency.

4) Now put 2 tbs of this egg mixture in the middle of the paratha and folding it like an envelope fry it on both sides. Drizzle small amount of oil on top of the paratha while frying. Serve hot.
