Today was Sunday. My hubby bought night show tickets for Tintin. It happened many a time that owing to making preparation for dinner, we had been late to the movies. Since Tintin was a movie I had been waiting for months to release, I didnt want to miss first few minutes. Hence I wanted to make something simple and easy for dinner that would take less time, yet would taste awesome. With that intent, I concoted Pan Fried Mushroom Paneer that complemented noodles delightfully. Below goes the recipe:
Ingredients: Cooking time: 20-30 minutes
500 gm button mushroom (boiled & chopped)
250 gm paneer (minced)
1 yellow bell pepper (chopped)
1 red bell pepper (chopped)
1 onion (chopped)
3-4 cloves of garlic (minced)
1 tbs soya sauce
1 tbs chilli sauce
1/2 tbs of vinegar
1 tsp black pepper powder
1 tsp ground thyme
1 tsp of dried basil leaves
salt to taste
Olive oil for cooking
Method:
1) Heat oil in a non-sticky frying pan. Add onion & garlic. Fry till onion turns translucent.
2) Add red & yellow bell pepper. Saute for 2 minutes. Add paneer and stir fry till paneer turns golden in color.
3) Add mushroom & stir fry on medium heat for 8-9 minutes. Add soya sauce, red chilli sauce, vinegar. black pepper powder, ground thyme & salt. Stir cook for 5 minutes and turn off the heat.
4) Add basil leaves and mix in. Serve hot with noodles.
